Ingredients:


- 3 large eggs


- Salt, to taste


- Pepper, to taste


- 1 tbsp unsalted butter


- Optional fillings: cheese, herbs (like chives or parsley), diced ham, or sautéed vegetables




Instructions:


1. Prepare Fillings: If you're using fillings like cheese, herbs, or pre-cooked meats/vegetables, have them chopped and ready to go.


2. Beat the Eggs: In a bowl, beat the eggs with a pinch of salt and pepper until well mixed and slightly frothy.


3. Heat the Pan: Place a non-stick skillet over medium-high heat and add the butter, letting it melt completely.


4. Cook the Omelette: Pour the eggs into the skillet. Let them sit, undisturbed, for a few seconds, then start to gently pull the eggs from the edges toward the center with a spatula, tilting the pan to let the uncooked eggs flow to the edges. Repeat until the eggs are mostly set but still slightly runny on top.


5. Add Fillings (Optional): Sprinkle your choice of fillings on one half of the omelette if using.


6. Fold and Serve: Carefully fold the omelette in half over the fillings with the spatula. Let it cook for another minute or so, then slide it onto a plate. It should be slightly golden on the outside and just cooked on the inside.
